  • 1 tbsp baking powder
  • 2 eggs
  • 1 cup plain low-fat yogurt or buttermilk
  • ½ cup milk
  • 1 tbsp mild honey
  • 2–3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 4 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tsp rubbed sage (or 2 tbsp fresh)
  • 1 tbsp fresh thyme (or 1½ tsp dried)
  • ½ cup chopped parsley
  • Black pepper
  • Double batch of cornbread, crumbled
  • ½ cup milk (more if needed)
  • 4 tbsp unsalted butter (for baking separately)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In one bowl, mix cornmeal, flour, salt, and baking powder. In another bowl, whisk eggs, yogurt (or buttermilk), and milk until smooth.
  3. Combine dry and wet ingredients until a smooth batter forms.
  4. Melt butter in a skillet and pour in the batter; bake for 35–40 minutes until golden brown. Let cool before crumbling.
  5. Sauté chopped onion and diced celery in olive oil until softened. Add minced garlic and cook until fragrant.
  6. Mix crumbled cornbread with sautéed vegetables and herbs; add milk as needed to moisten.
  7. Transfer mixture to a buttered baking dish; cover with foil and bake at 325°F (160°C) for 30 minutes. Uncover for the last 10 minutes for a crispy top.
  8. Serve warm alongside your favorite main dishes.
