  • 500g bread flour
  • 75g granulated sugar
  • 10g instant yeast
  • 10g salt
  • 300ml cold whole milk
  • 60g unsalted butter, melted
  • 250g cold European butter
  • 200g dark chocolate (70% cocoa), chopped
  • 150g shelled roasted pistachios, roasted
  • 50g brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • Pinch of sea salt
  • 2 large eggs, beaten (for egg wash)
  • 50g chopped pistachios for topping
  • Flaky sea salt for finishing

Instructions

  1. Combine flour, sugar, yeast, and salt in a bowl; add cold milk and melted butter. Knead until smooth. Chill dough for at least 4 hours.
  2. Prepare a cold butter block by pounding it into an 8×8 inch square between parchment paper.
  3. Roll out chilled dough; fold in the butter block and laminate by rolling and folding several times.
  4. Create filling: pulse pistachios, brown sugar, vanilla extract, almond extract, and sea salt in a food processor until coarsely ground.
  5. Shape croissants: Roll out dough, cut into rectangles, fill with chocolate and pistachio mixture, roll up tightly.
  6. Allow croissants to rise until doubled; preheat oven to 400°F (200°C), brush with egg wash, top with chopped pistachios and sea salt.
  7. Bake for about 18-20 minutes until golden brown.
