  • 1 cup cold unsalted butter
  • ¾ cup cold milk
  • 1 cup ground pistachios
  • ½ cup powdered sugar
  • ¼ cup almond flour
  • ¼ cup unsalted butter (softened)
  • 1 egg (for filling)
  • Additional egg for egg wash
  • Crushed pistachios for topping
  • Honey or simple syrup for glazing

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Stir in cold milk until the dough forms.
  2. Incorporate cold butter into the dough by folding it in layers. Chill for at least 1 hour.
  3. Roll out the dough into a rectangle and laminate by folding it like a letter; repeat this process several times, chilling between folds.
  4. Mix ground pistachios, powdered sugar, almond flour, softened butter, egg, and vanilla until smooth to create the filling.
  5. Roll the laminated dough into triangles and fill with pistachio cream before shaping into croissants.
  6. Allow to rise for about 1 to 1.5 hours until puffed.
  7. Brush with beaten egg, sprinkle with crushed pistachios, and bake at 375°F for 18 to 22 minutes until golden brown.
