  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 3 large eggs (room temperature)
  • ½ cup whole milk
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • ¼ tsp almond extract (optional)
  • 1 ½ cups mascarpone cheese (cold)
  • 1 cup heavy cream
  • ⅓ cup powdered sugar

Instructions

  1. Prepare the pistachios by finely grinding them in a food processor. Combine with flour, baking powder, and salt in a bowl.
  2. In a mixing bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in milk, oil, vanilla extract, and almond extract if desired.
  3. Fold in the dry ingredients until just combined. Divide batter among three greased and parchment-lined round cake pans.
  4. Bake at 350°F (175°C) for about 22–25 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  5. Whip heavy cream until soft peaks form; gently fold in mascarpone cheese, powdered sugar, and vanilla until smooth.
  6. Assemble by layering mascarpone cream between cooled cake layers and frosting the top and sides with remaining cream.
