  • 2 ½ cups all-purpose flour
  • 1 tsp kosher salt
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • 6 slices turkey (diced)
  • 1 large onion (diced)
  • 2 lb Yukon Gold potatoes (peeled and cubed)
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese
  • 1 egg (beaten)

Instructions

  1. Prepare the pie crust by mixing flour and salt. Cut in cold butter until crumbly. Gradually add ice water to form a dough. Refrigerate.
  2. Cook diced turkey in a skillet until crisp; set aside. Sauté onions in the same skillet until translucent.
  3. Boil cubed potatoes until tender, then drain.
  4. In a bowl, combine cooked turkey, sautéed onions, boiled potatoes, heavy cream, salt, pepper, and cheddar cheese.
  5. Preheat oven to 375°F (190°C). Roll out the chilled crust, fill with the mixture, and cover with another crust if desired. Brush with beaten egg.
  6. Bake for 45–50 minutes or until golden brown.
