  • 23 pounds flank steak (sliced thin)
  • 1/3 cup sofrito
  • ¼ cup chopped cilantro
  • 8 cloves garlic (crushed)
  • 2 tablespoons oil (divided)
  • 10 dashes Maggi liquid seasoning (or 2 teaspoons salt)
  • 1 teaspoon chicken bouillon seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon adobo seasoning
  • 1 teaspoon ground black pepper
  • ½ teaspoon cumin
  • ½ red bell pepper (sliced thin)
  • ½ green bell pepper (sliced thin)
  • ½ red onion (sliced thin)
  • 3 bay leaves
  • 12 cups water

Instructions

  1. Marinate the Steak: In a large bowl, combine flank steak, cilantro, sofrito, garlic, 1 tablespoon oil, Maggi seasoning, chicken bouillon, oregano, adobo, black pepper, and cumin. Mix until well coated. Cover and marinate for at least one hour or preferably overnight.
  2. Sauté the Steak: Heat the remaining tablespoon of oil in a large pot over medium-high heat. Add marinated steak and sauté for about 5-7 minutes until juices are released. Stir in sliced peppers and onions.
  3. Cook Thoroughly: Add enough water to cover the meat completely along with bay leaves. Bring to a medium heat and stir occasionally until the water reduces by half. Lower the heat, cover, and simmer on low for about one hour until the meat is tender.
