  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • Pinch of cloves
  • 1 1/4 cups pumpkin puree
  • 1/2 cup butter (room temperature)
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1/2 cup cold butter, cubed (1 stick)
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In an electric mixer bowl, beat together room-temperature butter and pumpkin puree until blended. Add granulated sugar and mix until smooth. Beat in eggs one at a time followed by vanilla.
  4. Gradually add the dry ingredients into the wet mixture alternately with milk until just combined.
  5. For the crumb topping, mix cold cubed butter, brown sugar, flour, cinnamon, and nutmeg until crumbly.
  6. Pour half of the batter into the prepared dish, sprinkle with half of the crumb topping, add remaining batter followed by the rest of the crumbs.
  7. Bake for 45–55 minutes or until a toothpick comes out clean.
