  • 2 medium delicata squash
  • 1 tablespoon oil
  • 1/2 cup dried quinoa
  • 1 cup vegetable broth
  • 1/2 red onion (diced)
  • 1 cup canned chopped tomatoes
  • 1 green pepper (diced)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • salt & pepper to taste
  • 1 cup shredded Mexican cheese blend (or vegan cheese)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the delicata squash lengthwise, remove seeds and stringy flesh, then season inside with oil, salt, and pepper.
  3. Place cut-side down on a baking sheet and roast for 20-30 minutes until tender.
  4. While the squash roasts, heat a pot over medium heat. Sauté onions and peppers until soft.
  5. Add quinoa, vegetable broth, tomatoes, cumin, garlic powder, paprika, salt, and pepper; cook for 15-20 minutes until quinoa is fluffy.
  6. Remove squash from oven and flip cut-side up. Fill each half with the quinoa mixture and top with cheese.
  7. Return to the oven for an additional 10 minutes until cheese melts.
