  • 2 medium beets, peeled and cubed
  • 1 large sweet potato, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted walnuts
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh dill

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed beets and sweet potatoes with olive oil, salt, and black pepper until well coated.
  3. Spread the seasoned vegetables on a baking sheet in an even layer. Roast for about 25–30 minutes or until tender, stirring halfway through.
  4. While the vegetables roast, prepare the yogurt dressing by whisking together Greek yogurt, lemon juice, honey, minced garlic, and chopped dill in another bowl until smooth.
  5. Once roasted, let the beets and sweet potatoes cool slightly before combining them in a large serving bowl with crumbled feta and toasted walnuts. Drizzle with yogurt dressing before serving and toss gently.
