  • 8 ounces goat cheese, softened
  • 1/2 cup roasted beets, peeled and finely grated
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup pistachios, chopped
  • 1 tablespoon olive oil (for roasting the beets)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the beets thoroughly and coat them with olive oil. Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45-60 minutes until tender.
  2. Once cooled, unwrap the beets and peel off the skin. Finely grate the peeled beets into a mixing bowl.
  3. Add softened goat cheese, honey, black pepper, and garlic powder to the bowl with grated beets. Mix until well combined.
  4. On a piece of plastic wrap, spoon the cheese mixture and shape it into a log using your hands. Wrap tightly in plastic wrap and refrigerate for at least one hour.
  5. Combine chopped parsley and pistachios on a plate. Remove the cheese log from plastic wrap and roll in the parsley-pistachio mixture until fully coated.
  6. Slice into rounds or serve whole on a platter with crackers or bread.
