  • 2 cups dry sushi rice
  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 1 1/2 lb salmon fillet
  • Salt & pepper to taste
  • 1/2 tsp garlic powder
  • 8 oz imitation crab meat (chopped)
  • 1/2 cup Japanese mayonnaise
  • 4 oz cream cheese (softened)
  • 1 Tbsp sriracha
  • 1 Tbsp low sodium soy sauce
  • 2 Tbsp furikake
  • Spicy mayo (Mayo + sriracha + lime juice)
  • Green onion
  • Black and white sesame seeds
  • Roasted seaweed
  • English cucumber
  • Avocado slices

Instructions

  1. Rinse the sushi rice under cold water using a fine-mesh sieve until water runs clear. Cook according to rice cooker instructions.
  2. Preheat the oven to 400°F. Season the salmon fillet with salt, pepper, and garlic powder, then bake for 15–20 minutes until cooked through.
  3. Flake the cooled salmon into a mixing bowl and combine with chopped imitation crab, Japanese mayonnaise, softened cream cheese, sriracha, and low-sodium soy sauce.
  4. In a greased 9×13 baking dish, spread the cooled sushi rice and layer the spicy salmon mixture on top. Broil for about 4 minutes until golden.
  5. Drizzle with spicy mayo and garnish with green onions and sesame seeds before serving.
