  • 2 stalks celery (diced)
  • 1 cup frozen peas
  • 2 tablespoons fresh thyme (chopped)

  • Salt and pepper to taste
  • 2 pie crusts (pre-made or homemade)
  • 1 beaten egg (for egg wash)

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté diced onions until translucent, then add garlic, carrots, and celery; cook until tender.
  2. In a mixing bowl, combine lobster meat, heavy cream, chicken or seafood stock, peas, thyme, lemon juice, salt, and pepper. Mix well.
