  • 1 1/2 lbs rainbow carrots, peeled and julienned
  • 1/4 cup scallions, finely chopped
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp fresh basil, chopped
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 3 tbsp low sodium Tamari (or soy sauce)
  • 1 tbsp white miso
  • 1 tsp sriracha (adjust to taste)
  • 1 tbsp coconut sugar
  • 1 clove garlic, minced
  • 1 tsp ginger, grated

Instructions

  1. Toast sesame seeds in a pan over medium heat for 5–7 minutes until golden brown; set aside.
  2. Julienne the carrots using a sharp knife or food processor and place them in a large mixing bowl.
  3. Add finely chopped scallions, cilantro, and basil to the bowl; toss gently.
  4. In a blender or food processor, combine sesame oil, rice vinegar, Tamari, white miso, sriracha, coconut sugar, garlic, and ginger; blend until smooth.
  5. Pour dressing over the carrot mixture and toss evenly to coat all ingredients.
  6. Chill in the refrigerator for at least one hour before serving to enhance flavors.
