  • 1 (15-ounce) can tomato sauce (no added sugar)
  • 1 (15-ounce) can fire-roasted tomatoes
  • 1 (15-ounce) can black beans (rinsed and drained)
  • 1 (15-ounce) can kidney beans (rinsed and drained)
  • 1 (15-ounce) can pinto beans (rinsed and drained)
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon mild chili seasoning
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice
  • 2 tablespoons optional hot sauce

Instructions

  1. Wash and chop all vegetables into small pieces.
  2. Add chopped onions, red peppers, carrots, and celery to the slow cooker.
  3. Pour in tomato sauce and fire-roasted tomatoes.
  4. Rinse and add all beans to the mixture.
  5. Season with garlic powder, ground cumin, mild chili seasoning, smoked paprika, and salt.
  6. Stir well to combine all ingredients.
  7. Cover the slow cooker; set it on low heat for 4 hours or high heat for about 2 hours.
