  • 6 ounces thin rice noodles
  • 3 ounces skinless boneless chicken breast (cut into thin strips)
  • 3 ounces small shrimp (peeled and deveined)
  • 2 large eggs (beaten)
  • 1½ tablespoons minced garlic
  • 2 leaves napa cabbage (cut into thin strips)
  • ½ large carrot (cut into matchsticks)
  • 1 stalk celery (cut into matchsticks)
  • 1½ tablespoons curry powder
  • 1 tablespoon chicken bouillon powder
  • Oil as needed for cooking

Instructions

  1. Soak rice noodles in hot water until soft, then drain.
  2. Coat chicken strips in water, vinegar, salt, and cornstarch; set aside.
  3. Heat oil in a wok; stir-fry garlic, napa cabbage, carrot, and celery until tender.
  4. Add coated chicken; cook until done. Then add shrimp until pink.
  5. Toss in soaked noodles along with curry powder and seasonings; mix well.
  6. Stir in beaten eggs until fully cooked, then add green onions for garnish.
