  • 2.5 lb beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon tomato paste
  • 14 oz crushed tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a Dutch oven, heat olive oil over medium heat. Sauté onions and garlic until soft.
  3. Add beef cubes and brown on all sides for about 8-10 minutes.
  4. Stir in carrots, celery, and red bell pepper, then mix in tomato paste, crushed tomatoes, apple vinegar, and beef stock.
  5. Add oregano and thyme; stir well.
  6. Cover and bake for 2.5 to 3 hours until the meat is tender.
