Instructions

  1. In a medium saucepan, whisk together the heavy cream, minced garlic, dried thyme, and nutmeg over medium heat until heated through. This should take about 1-2 minutes.
  2. Add a layer of sliced potatoes into your slow cooker in an overlapping pattern. Season them lightly with kosher salt and black pepper. Pour 1/3 cup of the warm cream mixture over the potatoes and sprinkle with some Gruyere cheese. Repeat this layering process until all potato slices are used.
  3. Cover your slow cooker and set it to high heat. Cook for about 4-5 hours or until the potatoes are tender when tested with a fork. Afterward, sprinkle freshly grated Parmesan on top, cover again, and cook for an additional 5 minutes until melted.
