  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 5 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine beef cubes with Worcestershire sauce, salt, black pepper, Italian seasoning, and smoked paprika. Toss to coat evenly.
  2. Layer halved baby potatoes in the bottom of the slow cooker. Drizzle with half of the melted butter and olive oil; add minced garlic evenly.
  3. Place seasoned beef on top of the potatoes and drizzle with remaining melted butter and olive oil.
  4. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours until beef is fork-tender and potatoes are cooked through.
  5. Stir gently before serving and garnish with fresh parsley.
