  • 2 tbsp gochujang
  • 1 tbsp gochugaru (or ½ tsp chili flakes)
  • 1/2 tbsp soy sauce
  • 1 tsp rice apple vinegar
  • 1/2 tbsp sugar
  • 1/2 tsp toasted sesame oil
  • 1/2 cup water
  • 2 tbsp neutral oil (divided)
  • 2 packs enoki mushrooms
  • 1 clove garlic (minced)

Instructions

  1. In a small bowl, mix together gochujang, gochugaru, soy sauce, rice vinegar, sugar, toasted sesame oil, and water until combined.
  2. Trim the brown roots from the enoki mushrooms and rinse. Break into smaller bundles.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat and sauté half the mushrooms until golden brown (about 1-2 minutes per side). Remove and repeat with remaining mushrooms.
  4. Add the remaining tablespoon of oil to the skillet and sauté minced garlic until fragrant (about 30 seconds). Pour in the sauce mixture and simmer.
  5. Return cooked mushrooms to the skillet and cook for an additional 3-4 minutes until thickened. Serve hot.
