1 chicken breast, cut into cubes
1 tsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp chili powder or cayenne
Salt & pepper to taste
1 cucumber, sliced
56 cherry tomatoes, halved
2 tbsp red onion, chopped
1 tbsp chopped mint or parsley
Squeeze of lemon juice
1 cup cooked white rice
1 avocado, sliced
1 tbsp spicy mayo (mayo + sriracha mix)
Optional: baby spinach or mixed greens
Instructions
Cook the Chicken: In a skillet over medium heat, sear cubed chicken tossed with olive oil, paprika, garlic powder, chili powder (or cayenne), salt, and pepper for 5-6 minutes until browned and cooked through.
Make the Salad: In a mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped red onion, herbs, lemon juice, salt, and pepper. Toss well and chill in the refrigerator.
Assemble the Bowl: Layer cooked rice in a bowl followed by optional greens. Top with grilled chicken pieces, avocado slices, cucumber salad, and drizzle with spicy mayo.
