  • 1 chicken breast, cut into cubes
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder or cayenne
  • Salt & pepper to taste
  • 1 cucumber, sliced
  • 56 cherry tomatoes, halved
  • 2 tbsp red onion, chopped
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado, sliced
  • 1 tbsp spicy mayo (mayo + sriracha mix)
  • Optional: baby spinach or mixed greens

Instructions

  1. Cook the Chicken: In a skillet over medium heat, sear cubed chicken tossed with olive oil, paprika, garlic powder, chili powder (or cayenne), salt, and pepper for 5-6 minutes until browned and cooked through.
  2. Make the Salad: In a mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped red onion, herbs, lemon juice, salt, and pepper. Toss well and chill in the refrigerator.
  3. Assemble the Bowl: Layer cooked rice in a bowl followed by optional greens. Top with grilled chicken pieces, avocado slices, cucumber salad, and drizzle with spicy mayo.
