  • 450g flank or sirloin steak
  • 1½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup long-grain white rice
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tsp ground cumin
  • 1 tsp garlic powder
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 cups broth or water
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Prepare the Steak: Pat dry the steak, rub with olive oil, and season with paprika, cumin, garlic powder, salt, and pepper.
  2. Sear the Steak: Heat a large skillet until hot; sear the steak for 4–5 minutes on each side. Let rest before slicing thinly.
  3. Cook the Rice: Rinse rice under cold water, sauté in olive oil with garlic powder, add broth or water, bring to boil, cover, and simmer until cooked.
  4. Make the Queso Sauce: In the same skillet, melt butter and cook garlic; stir in milk and gradually add cheeses until smooth.
  5. Assemble: Place rice on plates, top with sliced steak and queso sauce, then garnish with fresh cilantro, lime wedges, avocado slices, and jalapeños.
