- 1 ½ lbs lean ground beef
- 1 box stove top stuffing mix (any flavor)
- 1 cup diced onion
- 2 eggs
- ⅓ cup milk
- ¾ cup ketchup
- 1 Tbsp white vinegar
- Preheat the oven to 350°F and prepare a baking sheet lined with aluminum foil.
- In a large bowl, combine ground beef, stuffing mix, diced onion, eggs, and milk. Mix until well blended.
- Lightly spray a loaf pan with non-stick cooking spray and pack the meat mixture tightly into the pan.
- Flip the loaf pan onto the prepared baking sheet to release the meatloaf.
- Bake uncovered for about 40 minutes.
- While baking, mix ketchup and vinegar in a separate bowl. After 40 minutes, spread this glaze over the meatloaf.
- Return to the oven and bake an additional 10-30 minutes or until it reaches an internal temperature of at least 160°F.
- Let rest for 10 minutes before slicing.
