  • 1 ½ lbs lean ground beef
  • 1 box stove top stuffing mix (any flavor)
  • 1 cup diced onion
  • 2 eggs
  • ⅓ cup milk
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet lined with aluminum foil.
  2. In a large bowl, combine ground beef, stuffing mix, diced onion, eggs, and milk. Mix until well blended.
  3. Lightly spray a loaf pan with non-stick cooking spray and pack the meat mixture tightly into the pan.
  4. Flip the loaf pan onto the prepared baking sheet to release the meatloaf.
  5. Bake uncovered for about 40 minutes.
  6. While baking, mix ketchup and vinegar in a separate bowl. After 40 minutes, spread this glaze over the meatloaf.
  7. Return to the oven and bake an additional 10-30 minutes or until it reaches an internal temperature of at least 160°F.
  8. Let rest for 10 minutes before slicing.
