  • 1/2 cup rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 3 tbsp maple syrup
  • 2 tbsp coconut oil
  • 1 cup fresh strawberries, finely diced
  • 454 g silken tofu, drained
  • 1/3 cup maple syrup
  • 1/4 cup raw cacao powder
  • 3 tbsp corn starch
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line an 8×8 baking sheet with parchment paper.
  2. In a large bowl, mix almond flour, rolled oats, shredded coconut, maple syrup, and coconut oil until crumbly. Press firmly into the prepared baking sheet.
  3. In another bowl, blend diced strawberries with silken tofu until smooth. Add maple syrup, raw cacao powder, corn starch, and vanilla extract; mix until combined.
  4. Pour the strawberry filling over the crust and spread evenly.
  5. Bake for about 32 minutes or until set. Allow cooling before cutting into squares.
