  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • 8 oz semi-sweet chocolate (chopped)
  • 1 cup heavy cream
  • Fresh strawberries
  • Chocolate shavings

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, milk, vegetable oil, and vanilla extract; then mix into dry ingredients.
  4. Stir in boiling water until smooth.
  5. Divide batter between pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. Cool cakes for 10 minutes before transferring to a cooling rack.
  7. For the strawberry filling, cook chopped strawberries with sugar and lemon juice until softened; thicken with cornstarch mixed with water.
  8. For ganache, heat heavy cream until boiling and pour over chopped chocolate; stir until smooth.
  9. Assemble by layering cake with strawberry filling and pouring ganache on top.
