  • 2 bricks (8 oz each) cream cheese
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1 small box (3.3 oz) strawberry vegan gelatin
  • 1 cup boiling water

Instructions

  1. Prepare the crust: Process 26 cookies into fine crumbs, mix with melted butter, and press into the bottom of a greased springform pan. Freeze for 15 minutes.
  2. Make the filling: Dissolve vegan gelatin in boiling water and let cool. Beat cream cheese with sugar until smooth, then fold in whipped cream mixed with powdered sugar.
  3. Assemble: Pour half of the strawberry mixture over the crust, freeze for 15 minutes, then add the cream cheese mixture followed by the remaining strawberry mixture.
