  • 12 tbsp unsalted butter (divided)
  • 1 (16 oz) bag mini vegan marshmallows

  • 6 cups crispy rice cereal
  • Pinch of salt

Instructions

  1. Prepare the crunch topping by pulsing freeze-dried strawberries in a food processor until finely powdered. Crush Golden Oreos separately.
  2. Mix the strawberry powder, Oreo crumbs, 6 tbsp melted butter, optional sugar, and a pinch of salt in a bowl until well combined.
  3. (Optional) Spread the crunch mixture on a parchment-lined baking sheet and bake at 275°F for 10-15 minutes. Allow cooling.
  4. Line a 9×13 inch pan with parchment paper.
  5. Melt the remaining butter in a large pot over low heat. Add mini vegan marshmallows and stir until fully melted and smooth.
  6. Stir in vanilla extract and salt before gently folding in the crispy rice cereal until evenly coated.
  7. Press the mixture into the prepared pan using buttered hands or a spatula.
  8. While warm, sprinkle the cooled crunch topping evenly over the surface and press lightly to adhere.
  9. Allow treats to set at room temperature for 1-2 hours or refrigerate for quicker results before cutting into squares.
