  • 2 tablespoons granulated sugar (or honey)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 ½ cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • ½ cup light brown sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup unsalted butter, cold and cut into small cubes
  • ¼ cup honey or maple syrup (optional, for added sweetness)
  • ½ teaspoon vanilla extract

Instructions

  1. Prepare the strawberry filling by combining chopped strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla extract in a saucepan. Cook over medium heat until thickened (about 5-7 minutes). Let cool.
  2. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  3. In a large bowl, mix oats, flour, brown sugar, baking powder, salt, and cinnamon. Cut in cold butter until crumbly. Stir in vanilla and optional honey/maple syrup.
  4. Press about two-thirds of the crumble into the bottom of the pan as the base. Spread cooled strawberry filling on top and sprinkle remaining crumble over it.
  5. Bake for 35-40 minutes until golden brown on top. Allow cooling before slicing into squares.
