  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 3 tablespoons butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries

Instructions

  1. In a small saucepan over medium heat, combine the strawberries, sugar, lemon juice, and water. Stir and cook for 5–7 minutes until the strawberries release their juices and soften.
  2. Stir in the cornstarch mixture and continue cooking for 1–2 minutes until it reaches a syrupy consistency. Remove from heat and set aside to cool.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients. Gently mix until just combined; don’t worry about lumps. Set aside to rest for 10 minutes.
  5. While the batter rests, hull and dice more strawberries. Spread them on paper towels to dry slightly before folding them into the batter just before cooking.
  6. Warm a non-stick skillet or griddle over medium heat. Grease lightly with butter or cooking spray. Pour about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook for about 2–3 minutes until bubbles form on top and edges look set. Flip each pancake carefully and cook for another 1–2 minutes until golden brown.
  8. Serve your pancakes hot with warm strawberry sauce drizzled on top.
