  • 1/4 cup Medjool dates, pitted (about 3-4)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup freeze-dried strawberries, crushed
  • 1/4 cup white chocolate chips
  • 1 tsp coconut oil
  • Additional freeze-dried strawberries for garnish

Instructions

  1. In a food processor, pulse rolled oats and raw cashews until fine.
  2. Add pitted Medjool dates and pulse until chopped.
  3. Incorporate cashew butter, maple syrup, vanilla extract, and salt; blend until sticky dough forms.
  4. Mix in crushed freeze-dried strawberries.
  5. Scoop dough into small balls and place on a parchment-lined tray.
  6. Freeze for 20-30 minutes to firm them up.
  7. Melt white chocolate chips with coconut oil in the microwave.
  8. Drizzle melted chocolate over each bite and garnish with more strawberries.
  9. Chill until set, then store in an airtight container.
