  • ¼ cup white granulated sugar
  • ½ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ cup packed light brown sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tray with liners or grease it lightly.
  2. Make the streusel topping by mixing flour, brown sugar, and cinnamon in a bowl. Cut in cold butter until crumbly.

  4. In another bowl, combine wet ingredients: melted butter, eggs, buttermilk, and vanilla extract.
  5. Gently mix the wet ingredients into the dry ingredients until just combined; fold in diced peaches.
  6. Fill muffin cups three-quarters full and sprinkle with streusel topping.
  7. Bake for 18-22 minutes until a toothpick comes out clean. Let cool slightly before serving.
