  • 2 medium spaghetti squash
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 16 oz spicy Italian sausage (crumbled)
  • 10 oz broccoli florets
  • 6 oz cheddar cheese (shredded)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut spaghetti squash in half lengthwise and scoop out seeds.
  3. Brush insides with olive oil, season with salt and pepper, then place cut-side down on a baking sheet.
  4. Bake for 30–40 minutes until tender.
  5. In a skillet, heat 1 tablespoon of olive oil over medium heat; add crumbled sausage and cook until browned (5–7 minutes). Add broccoli and cook until tender (3–4 minutes).
  6. Remove from heat; mix in shredded cheddar cheese until melted.
  7. Scrape some flesh from the baked squash to create space and fill with sausage-broccoli-cheese mixture.
  8. Return stuffed squash to the oven for an additional 10 minutes until heated through.
