  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1 cup fresh pineapple chunks
  • 1 cup bell peppers
  • 3 green onions
  • 2 cloves garlic
  • 1 tablespoon fresh ginger
  • 2 tablespoons soy sauce
  • 12 tablespoons olive oil or sesame oil
  • 1 tablespoon brown sugar or honey

Instructions

  1. Prep the ingredients by dicing the chicken, chopping bell peppers and green onions, and mincing garlic and ginger.
  2. Heat oil in a large skillet over medium-high heat. Add garlic and ginger until fragrant, then add chicken pieces and sauté until golden but not fully cooked.
  3. Stir in bell peppers and half of the green onions; cook for 2 minutes. Add pineapple chunks and warm through.
  4. Combine rice, soy sauce, chicken broth, and brown sugar or honey in the skillet. Bring to a gentle boil, cover, reduce heat, and simmer for 18-20 minutes until rice is tender.
