  • 2 1/2 cups chocolate bear-shaped graham crackers
  • 7 tbsp unsalted butter (melted)
  • 5 oz kataifi dough, chopped
  • 6 tbsp unsalted butter
  • 3/4 cup pistachio paste
  • 2 tbsp tahini
  • 24 oz cream cheese (softened)
  • 1 cup white sugar
  • 1/3 cup sour cream
  • 3 large eggs (room temperature)
  • 1/4 tsp almond extract
  • 2 tsp vanilla extract
  • 1 1/4 cups chopped semi-sweet chocolate
  • 3/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a springform pan.
  2. Combine crushed graham crackers with melted butter and press into the bottom of the pan. Bake for 10 minutes.
  3. Melt butter and mix with chopped kataifi dough; layer over the crust.
  4. In a bowl, beat cream cheese and sugar until smooth, then add sour cream, tahini, extracts, salt, and eggs one at a time.
  5. Stir in pistachio paste; pour filling over kataifi layer and bake for 60–70 minutes until slightly jiggly in the center.
  6. For ganache, heat heavy cream until simmering; pour over chopped chocolate and stir until smooth.
  7. Pour ganache over cooled cheesecake; chill for at least four hours before serving.
