  • 200 g all-purpose flour
  • 140 g almond flour
  • 75 g sugar
  • 150 g margarine
  • 500 mL soy milk
  • 30 g cornstarch
  • 75 g brown sugar
  • 3 g agar-agar
  • Fresh pineapple sage (or lemon verbena)
  • 1 tsp vanilla extract
  • 250 g fresh strawberries

Instructions

  1. Preheat oven to 180°C (350°F). In a mixing bowl, combine flour, almond flour, sugar, and margarine until crumbly. Press into a tart pan and prick with a fork.
  2. Bake for about 20 minutes or until golden brown. Allow to cool completely.
  3. Heat soy milk in a saucepan until warm. In another bowl, mix cornstarch with brown sugar and agar-agar; gradually whisk in warm soy milk.
  4. Return mixture to the saucepan and cook on low heat until thickened (5–7 minutes). Stir in chopped pineapple sage and vanilla extract.
  5. Pour custard into the cooled crust and refrigerate for at least two hours until set.
  6. Garnish with sliced strawberries before serving.
