  • 1 Tablespoon fresh ginger (minced)
  • 1/2 bell pepper (thinly sliced)
  • 1 pound ground chicken (lean, or diced chicken breast or ground turkey)
  • 2 teaspoons light brown sugar
  • 1 Tablespoon hoisin sauce
  • 1/4 cup low-sodium soy sauce
  • 2 Tablespoons Asian Garlic Chili Sauce or Sambal Oelek
  • 1 cup low-sodium chicken broth
  • 1/4 cup water
  • 1 teaspoon cornstarch
  • 2/3 cup fresh basil leaves
  • Cooked Jasmine rice (for serving)

Instructions

  1. Heat olive oil in a large wok or skillet over medium-high heat.
  2. Sauté sliced shallots for 2 minutes until translucent, then add garlic and ginger; cook for 1 minute.
  3. Add bell pepper; sauté for 2–3 minutes until tender-crisp.
  4. Incorporate ground chicken; cook until no longer pink, about 5–7 minutes.
  5. Stir in light brown sugar, hoisin sauce, and garlic chili sauce until well combined.
  6. Add chicken broth and water; mix cornstarch with water to create a slurry and add to the pan.
  7. Cook until the sauce thickens, about 2–3 minutes.
  8. Stir in fresh basil leaves and cook for an additional minute before serving over Jasmine rice.
