  • 1 medium red onion
  • 4 cloves garlic
  • 3 stalks celery
  • 400 g tin chopped tomatoes
  • 2 tablespoons tomato purée
  • 400 g tin mixed beans in chilli sauce
  • 200 ml beef stock
  • 1 tablespoon dried thyme
  • 1 ½ teaspoon chilli powder
  • 2 teaspoons cumin
  • 1 tablespoon cocoa powder or 1 small square of dark chocolate
  • 1 tablespoon smoked paprika

Instructions

  1. In a skillet, heat vegetable oil over medium heat. Add the ground beef, diced onion, and minced garlic; cook until browned (about 10 minutes).
  2. Transfer the beef mixture to your slow cooker. Add chopped tomatoes, tomato purée, mixed beans, beef stock, and all spices; stir to combine.
  3. Cover and cook on low for 8 hours or high for 5 hours. Adjust seasoning if necessary before serving.
  4. Serve hot over rice or with tortilla chips and toppings such as avocado.
