1 cup pineapple chunks (fresh or canned, drained if canned)
3/4 cup pineapple juice
1/4 cup soy sauce
1/4 cup brown sugar
2 tablespoons ketchup
1 tablespoon rice vinegar
2 cloves garlic, minced
1 tablespoon cornstarch
2 tablespoons water
For Garnish (Optional):
2 green onions, sliced
1 teaspoon sesame seeds
Instructions
In a bowl, toss the chicken pieces with flour, salt, and black pepper until evenly coated.
Heat vegetable oil in a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes, turning occasionally, until golden and cooked through. Remove and set aside.
In the same skillet, add pineapple chunks and cook for 2–3 minutes until slightly caramelized.
Add pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, and minced garlic. Stir well and bring to a simmer.
In a small bowl, mix cornstarch with water to create a slurry. Pour it into the sauce while stirring continuously until the sauce thickens.
Return the cooked chicken to the skillet and toss to coat evenly with the pineapple sauce. Cook for another 2–3 minutes so the flavors combine.
Garnish with sliced green onions and sesame seeds before serving.
Serve warm over steamed rice.
