  • 3/4 cup unsalted butter (cubed)
  • 2 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 egg yolk
  • 1 cup sugar
  • 2 tablespoons lemon zest (zest from 2 lemons)
  • 1 teaspoon vanilla extract

Instructions

  1. Heat lemon juice in a saucepan until reduced to about 2 tablespoons; stir in cubed butter until melted and set aside to cool.
  2. In a large bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, combine egg, egg yolk, sugar, lemon zest, and vanilla; stir in the cooled lemon-butter mixture.
  4. Combine wet and dry ingredients; mix until just combined. Chill dough for 45 minutes.
  5. Preheat oven to 350°F (175°C). Roll out chilled dough to about 1/8-inch thickness and cut into rounds.
  6. Bake for 6-7 minutes until edges are lightly browned. Cool on a wire rack.
