  • 200 g butter
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 3 tbsp cocoa powder (plus more for dusting)
  • 5 eggs (separated)
  • 1 1/4 cups granulated sugar
  • 1 1/2 cups almond flour

Instructions

  1. Preheat your oven to 180°C (350°F) and line an 8-9 inch springform pan with parchment paper.
  2. Melt the dark chocolate and butter together until smooth; let cool.
  3. Whisk egg yolks into the cooled chocolate mixture, adding vanilla, salt, and sifted cocoa powder.
  4. In another bowl, whip egg whites until soft peaks form, gradually incorporating granulated sugar until stiff peaks form.
  5. Carefully fold the chocolate mixture into the egg whites, then gently incorporate almond flour.
  6. Pour batter into the prepared pan and bake for about 30 minutes or until a skewer comes out with moist crumbs.
  7. Allow the torte to cool for about 40 minutes before dusting with cocoa powder or powdered sugar.
