  • 1 medium-sized red onion (minced)
  • 2 large garlic cloves (finely chopped)
  • 700 grams green peas (fresh or frozen)
  • 500 grams potatoes (peeled and cut into pieces)
  • 34 baby zucchinis (cut into thick pieces)
  • 2 medium carrots (sliced)
  • 3 teaspoons tomato paste
  • 2 medium-large ripe tomatoes (diced)
  • Fresh dill (finely chopped)
  • Sea salt to taste
  • 400 ml hot water or vegetable stock

Instructions

  1. Heat olive oil in a medium pot over moderate heat.
  2. Sauté minced onion and garlic until soft, about 3–4 minutes.
  3. Add potatoes, zucchini, peas, and carrots; cook for about 5 minutes.
  4. Stir in the tomato paste and cook for another minute.
  5. Add diced tomatoes along with salt and pepper; cook for 2 minutes.
  6. Pour in hot water or vegetable stock; bring to a gentle simmer.
  7. Cover and simmer on low heat for 40 to 50 minutes until vegetables are tender.
  8. Stir in remaining olive oil and fresh dill; adjust seasoning as needed.
  9. Let stand for 15 minutes before serving.
