  • 1 medium spaghetti squash
  • 1 pound ground turkey
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside with olive oil and season with salt and pepper.
  4. Place the halves cut-side down on a baking sheet and roast for 30-35 minutes until tender.
  5. Meanwhile, heat olive oil in a large skillet over medium heat. Sauté onion and garlic until translucent.
  6. Add ground turkey to the skillet and cook until browned.
  7. Stir in marinara sauce, oregano, basil, salt, and pepper; simmer for 10 minutes.
  8. Once the squash is done roasting, scrape the insides with a fork to create strands.
  9. Toss spaghetti squash strands with turkey marinara mixture and serve hot.
