  • Spices: cumin, onion powder, garlic powder, smoked paprika, cayenne pepper
  • Hot chili peppers (optional)
  • 2 tsp oil for frying

Instructions

  1. In a large pot over medium heat, add oil and sauté chopped onion and green pepper for about 5 minutes.
  2. Add minced garlic and sauté for an additional 1-2 minutes.
  3. Stir in diced tomatoes and cook for another 3-5 minutes until well combined.
  4. Add tomato paste, broth/water, cooked beans, and spices; bring to a simmer.
  5. Let the chili cook for about 30 minutes, stirring occasionally. If thickened too much, add more liquid as needed.
  6. For a creamier texture, blend part of the chili using an immersion blender before returning it to the pot.
  7. Serve hot over rice or with your favorite toppings.
