  • 1 cup Israeli couscous
  • 1 can chickpeas (drained and rinsed)
  • 1 cucumber (diced)
  • 3/4 cup yellow pepper (diced)
  • 1.5 cups cherry tomatoes (halved)
  • 1/3 cup fresh parsley (chopped)
  • 1/3 cup olive oil
  • 2 tbsp red apple vinegar
  • 3 tbsp fresh lemon juice
  • 1.5 tbsp oregano
  • 1 tbsp dill
  • 2 garlic cloves (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp red pepper flakes

Instructions

  1. Cook the Israeli couscous in boiling water for about 10-12 minutes until tender. Remove from heat and let cool.
  2. While cooling, dice the cucumber, yellow pepper, and red onion; halve the cherry tomatoes and chop the parsley.
  3. In a small bowl, whisk together olive oil, red apple vinegar, lemon juice, garlic, oregano, dill, salt, black pepper, and red pepper flakes.
  4. In a large mixing bowl, combine cooled couscous with chickpeas and all prepared vegetables. Pour dressing over and toss gently to coat.
  5. Chill in the fridge for at least 30 minutes before serving.
