  • 1/4 cup all-purpose flour

  • 1/2 cup cold water
  • 1 egg
  • Fresh herbs (cilantro, mint)
  • Vegetable oil for frying
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons lime juice, freshly squeezed
  • 1/4 cup warm water
  • 1 garlic clove, minced
  • 12 small red chilies, finely chopped (optional)
  • 1 tablespoon rice vinegar (optional for extra tang)

Instructions

  1. In a bowl, combine rice flour, all-purpose flour, baking powder, salt, and black pepper.
  2. In another bowl, whisk the egg with cold water until smooth; gradually mix into the dry ingredients to form a batter.
  3. Fold in the shrimp and herbs until well combined.
  4. Heat vegetable oil in a frying pan over medium heat.
  5. Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides.
  6. Prepare the Nuoc Cham dipping sauce by mixing fish sauce, sugar, lime juice, warm water, minced garlic, and optional chilies.
