  • 1 ripe watermelon
  • 230 g glutinous rice flour
  • 65 g cornstarch
  • 40 g sugar
  • 300 g watermelon juice (blended from watermelon)
  • 30 g butter
  • Cooked glutinous rice flour (for dusting)

Instructions

  1. Cut the watermelon into chunks and blend until smooth to create juice. Strain if necessary.
  2. In a mixing bowl, combine glutinous rice flour, cornstarch, and sugar; whisk until combined.
  3. Pour in the watermelon juice and melted butter; stir until smooth with no lumps.
  4. Transfer to a steamer basket lined with parchment paper and steam for about 20 minutes or until translucent.
  5. Once slightly cooled, dust hands with cooked glutinous rice flour, pinch off portions of dough, and shape into balls or discs.
  6. Serve immediately or store in an airtight container in the refrigerator.
