- 16 oz mixed nuts (cashews, almonds, pecans, walnuts)
- 1 large egg white
- 170g honey
- 1 1/2 tsp Kosher salt
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp chili powder
- 1/2 tsp red pepper flakes
- 1/2 tsp cayenne pepper
- 1/4 tsp cracked black pepper
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
- Whip the egg white in a mixing bowl until frothy.
- Toss the mixed nuts in the egg whites until evenly coated.
- Add honey and all spices; mix thoroughly to coat.
- Spread the nut mixture on the baking sheet and roast for 45-60 minutes, stirring every 15 minutes until lightly browned.
- Cool for at least 10 minutes before breaking apart into chunks.
