  • 2 chicken breasts, thawed and fat-trimmed
  • 1 ounce taco seasoning
  • 1 ounce ranch seasoning mix
  • 15 ounces canned black beans (undrained)
  • 15 ounces canned corn (undrained)
  • 10 ounces canned Rotel tomatoes with green chiles (undrained)
  • 8 ounces cream cheese
  • Optional toppings: tortilla strips, shredded cheese, sliced avocados, lime juice, chopped cilantro

Instructions

  1. Place the trimmed chicken breasts in the bottom of the Crock Pot.
  2. Layer canned black beans, corn, and Rotel tomatoes on top without draining.
  3. Sprinkle taco seasoning and ranch mix over the layers.
  4. Add cream cheese on top without mixing.
  5. Set Crock Pot to cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  6. Once cooked, shred the chicken using two forks and stir everything together until well combined.
  7. Serve hot with your favorite toppings.
