  • ½ teaspoon dried oregano

  • ½ teaspoon mustard powder
  • ¼ teaspoon black pepper

  • 1 pinch red pepper flakes
  • 3 tablespoons butter
  • 1 yellow onion (diced)
  • 1 large jalapeño pepper (seeded and diced)
  • 4 cloves garlic (minced)
  • 3 tablespoons flour
  • 6 cups chicken broth
  • â…“ cup half and half
  • 2 (15.5 oz.) cans cannellini beans (drained)
  • 1 teaspoon hot sauce
  • 2 (4 oz.) cans mild green chilies (undrained)
  • 1 ½ lbs. skinless chicken breast
  • 1 (15.25 oz.) can whole kernel sweet corn (drained)
  • 8 oz. cream cheese (softened)
  • Toppings: lime wedges, diced avocado, tortilla strips, Fritos, Monterey or Pepper Jack cheese

Instructions

  1. Combine seasoning ingredients in a small bowl; set aside.
  2. In a large pot over medium heat, melt the butter and sauté onions and jalapeños for about 5 minutes until soft. Add garlic and cook for another minute.
  3. Stir in flour to coat vegetables; cook for 2 minutes.
  4. Gradually add chicken broth while stirring continuously, then add half and half to create a smooth base.
  5. If desired, blend one cup of drained beans with some broth until smooth; return blended beans to pot along with remaining whole beans.
  6. Mix in seasonings and hot sauce; bring to a gentle boil then simmer uncovered for 15 minutes.
  7. Add seasoned chicken breasts and corn; let simmer for 15–20 minutes until chicken is cooked through.
  8. Shred the cooked chicken and stir back into the chili along with softened cream cheese until melted.
  9. Taste and adjust seasoning before serving hot.
