  • 2 ½ pounds stew meat (beef)
  • 2 cups chopped yellow onions
  • 5 medium carrots, chopped
  • 1 pound baby Yukon gold potatoes, halved
  • 4 cups beef stock
  • ¼ cup apple vinegar
  • ½ teaspoon black pepper
  • ½ teaspoon garlic salt
  • ½ teaspoon celery salt

Instructions

  1. Prepare the ingredients by chopping vegetables and seasoning the beef.
  2. Sear the seasoned beef in olive oil until browned on all sides.
  3. In the slow cooker, layer the seared beef at the bottom, followed by onions and garlic.
  4. Add apple vinegar and beef stock along with bouillon cubes.
  5. Top with carrots, potatoes, bay leaves, rosemary sprig, Worcestershire sauce, and tomato concentrate.
  6. Cook on low heat for about 210 minutes until the meat is tender.
  7. If desired, thicken the stew by mixing cornstarch with cold water and stirring it in during the last 30 minutes.
