  • 2 cups cheddar cheese (shredded)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional)
  • Fresh parsley for garnish
  • Extra shredded cheddar cheese for garnish

Instructions

  1. In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Transfer the beef to a slow cooker and add chopped onion, diced potatoes, sliced carrots, and celery.
  3. Pour in the broth and sprinkle with thyme, parsley, paprika, salt, and pepper. Stir gently to combine.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours until vegetables are tender.
  5. In the last 20 minutes of cooking, stir in heavy cream and shredded cheddar cheese.
  6. Serve hot garnished with fresh parsley and extra cheese if desired.
